Masahiro Ueno

From a young age, Masahiro grew up in an environment where he developed a familiarity with Nagasaki's fish. At the age of 16, he joined a fish brokerage firm, dealing with high-end restaurants and refining his discerning eye in the fish market. As he continued to hone his skills in sushi restaurants and hotels across the country, his networking skills and inquisitive spirit allowed him to build relationships with trusted production partners from various regions of Japan. Since 2022, he has been working as a sushi craftsman at Sushi Dejima.

The Sculpture.

In Nagasaki's Temples which has historical ties to China, there is a ritual implement shaped like a fish.

It is called the "Hanpou" (food bell) because it was often rung to signal mealtime by striking the belly. It was also sometimes called the "Gyohou" (fish bell) or "Gyoban" (fish plate) and hung in the temple.

Originally made of wood, it was given a touch of Sushi Dejima essence and sculpted in iron by metal sculptor Akira Tanabe.
